Giant Sugarfree Applesauce Cookies

Ingredients
- 1 cup wholemeal flour- 1 cup oats- 1 1/5 cups unsweetened applesauce- 1 cup raisins- 1 tsp cinnamon- 2 tsp ginger- 1/2 tsp salt- 1 tsp baking powder- 2 medium eggs- 1 tsp vanilla extract
Directions
(This recipe works best if the raisins are soaked in water for a couple of hours beforehand. You can also add half a cup of nuts to the mix if you fancy - it makes the texture much more interesting!)

- Preheat oven to Gas Mark 6 (400 degrees) and line a baking tray with greaseproof paper.

- Place flour, oats, (softened) raisins, cinnamon, ginger, salt and baking powder in a larg bowl and mix.

- Then break the eggs into another bowl, beating in the applesauce before adding the vanilla extrat.

- Combine the wet and dry ingredients and mix well.

- Drop cookie mixture onto baking tray, spacing the cookies about 2 inches apart. These are big cookies!

- Bake for about 10 minutes, until dark golden brown.

- Leave to cool on a wire rack until completely cool before serving

- Recipe makes 12 cookies, each about 4 inches in diameter.
