Ingredients
1 lb lean ground beef1 cup chopped onion1 quart (4 cups) water1 cup cubed potato1 cup sliced celery1 can (20 ounces) tomatoes1 cup sliced carrot1/2 cup uncooked rice2 teaspoons saltPepper
Directions
Brown ground beef and drain. Add onion and cook until tender. Add next 6 ingredients and simmer 1 hour. Salt and Pepper to taste. Additional leftover vegetables may be added near the end of cooking time.

    I like this soup a lot, its not very soupy so add lots of extra water. Simmer it for more like 30-45 mins instead of an hour. It is good! but I have a hard time figuring out what 1 serving size is... - 5/2/11
