12 oz Turkey Strips (cut into cubes)1 Lg Spaghetti Squash (cut into half & remove seeds)8 Cloves of Garlic (minced)1 Lg Onion (Frenched or cut into long strips)16 oz Fresh White Button mushrooms (quarted)8 Tbsp Blue Bonnet Butter1/2 tsp Crushed Rosemary1/2 tsp Thyme1 tsp Italian Seasoning 1/2 tsp Fresh Cracked Black Pepper3 Tbsp Extra Virgin Olive OilSalt to tasteParsley Flakes to garnish
Cut squash into half & remove seeds. Place into a large oven proof pan, face down into 1/2" of water. Place into a 375F oven. Bake for 30 - 45 minutes or until tender. Mean while in a large skillet place onion, rosemary, thyme, italian seasoning, pepper, & oil. Cook until onions start to sweat. Place turkey & mushrooms into skillet. Cook until mushrooms start to brown. Once squash is done scrape the insides of squash out with a fork into a large bowl. Add butter, salt, & turkey mixture together with squash. Garnish with parsley & serve.
