Puerto Rican Chicken Fricasse

4 Boneless, skinless chicken breast (halved)4 TBSP Puerto Rican Sofrito (see sparkrecipe)1/2 can tomato paste2 packages Sazon (found in ethnic food aisle, made by Goya)4 potatoes, cut into 1" cubes1 Tbsp Olive Oil6-8 Cups Salted Water (to taste)
Place a large pot on stove using med-high heat. Mix olive oil, tomato paste, sofrito and sazon and simmer for 2 minutes. Add water, chicken and potatoes and simmer on medium heat for 30-40 minutes (or until chicken is done and potatoes are soft). Serve alone or with rice and beans.

I just made this for dinner tonight and it was excellent. I made it for my Puerto Rican husband and he loved it. I served it over some left over rice and beans we had. The only thing I changed was I shredded the chicken when I plated it. Thanks for the great and easy recipe, keep them coming. - 5/4/10
