Puerto Rican Chicken Fricasse

Ingredients
4 Boneless, skinless chicken breast (halved)4 TBSP Puerto Rican Sofrito (see sparkrecipe)1/2 can tomato paste2 packages Sazon (found in ethnic food aisle, made by Goya)4 potatoes, cut into 1" cubes1 Tbsp Olive Oil6-8 Cups Salted Water (to taste)
Directions
Place a large pot on stove using med-high heat. Mix olive oil, tomato paste, sofrito and sazon and simmer for 2 minutes. Add water, chicken and potatoes and simmer on medium heat for 30-40 minutes (or until chicken is done and potatoes are soft). Serve alone or with rice and beans.

    I just made this for dinner tonight and it was excellent. I made it for my Puerto Rican husband and he loved it. I served it over some left over rice and beans we had.     I Also add Goya adobo a tablespoon of vinegar, 1 tbayleave, 1cup of grape juice and let it simmer until sauce its thick. II serve it with brown rice and it taste great. - 5/11/13

    it needed something added to it, not sure what it's missing, but i added some garlic, a little salt, and some pepper. but definately delicious.. almost similar to the food my dad makes - 9/15/10

    This recipe never fails! I'm Puerto Rican and have learned to cook this dish w/ this recipe :-) The only thing i do differently is add a dash of salt, some minced garlic and a bit of Spanish Olives to enhance the flavor.
