Salmon Quiche with Zuchini Crust

CRUST1 1/2 c. shredded zucchini1 lg. egg white3 oz. part skim Mozzarella cheese shredded1 T parmesan cheese1 t salt1 T dried basil1 T paprikaQUICHE2 lg eggs4 lg egg whites15.75 oz can pink salmon1 med. banna pepper chopped1/4 c. green bell pepper chopped1/4 c. red bell pepper chopped1/4 c. onion chopped1 T. dried rosemary2 T. parmesan cheese shreddedcooking spray to coat pie plate
Preheat oven to 400 F
Spray 9" pie plate with cooking spray
Shred Zucchini and Mozzarella, combine the
first 7 ingrediants and press into pie plate to form crust. Bake for 15 min.
Beat egg whites till fulffy, beat eggs then fold into the egg white, fold in peppers, onion rosemary and salmon.
Sprinkle remaing parmesan cheese on top.
When crust comes out of the oven, reduce heat to 375.
Pour Egg mixture into crust, bake 30 to 40 minutes, until quiche is set.
