Moist & Light Banana Cupcakes

Ingredients
2 large Egg, fresh, whole, raw 0.50 tsp Salt 1 tsp Vanilla Extract 0.50 cup Applesauce, unsweetened 1 cup, mashed Banana, fresh 2.25 cup Flour, white 0.5 cup 2% Milk 0.5 cup Granulated Sugar 1 tsp Baking Soda 1.5 tsp Baking Powder .25 cup Domino Light Brown Sugar
Directions
Mix/sift together dry ingredients.

Mix applesauce with sugar, then mix in egg whites.

Lightly mash bananas; add vanilla and yogurt.

Combine the wet ingredients; mix in the dry ingredients until well blended.

Pour into lightly greased silicon muffin cups (if available) - fill 3/4 full.

Bake at 350 degrees for 20 - 25 minutes.

Makes 20 cupcakes.

    Pretty good! I didn't have any yogurt, so I just used 3/4 c applesauce instead. A bit heavy, but delicious! I used a cinnamon buttercream and it was amazing. - 6/6/11
