Quick Quiche

Ingredients
6 x eggs1 x cup milk1 cup flour1 x can cream corn1 x can of asparagus (or 1 x cup fresh spears)1 x cup of spinach1 x cup of swiss chard (silverbeet)1 x cup of tomatoes (cherry toms sliced in half)1 x cup cottage cheese 1 x cup parmesan cheeseSalt and Pepper to taste
Directions
In a bowl whisk 6 eggs, milk and flour

Fold in cream corn. spinach, swiss chard (silverbeet) and low fat colby/chedder cheese.

Spray qucihe dish with cooking spray, When I make this at home I make 2 shallow quiche dishes otherwise this will fill a deep quiche dish

Pour in quiche mixture decorate the top with the cherry toms that have been sliced in half.

Serve with a nice crisp salad and balsamic dressing.

Serves 4 - 6 people depending on how hungry you are!!
