Baked Quinoa

Ingredients
6 crackers crushed - Town House Reduced Fat1.5 cups of precooked quinoa1/4 cup southwestern Egg Beaters3 cloves garlic chopped or crushed3/4 cups chopped onion 1/4 tsp saltpepper to taste1 cup Iceberg Lettuce
Directions
In a large bowl, mix together all ingredients except the lettuce. Pour into a baking dish sprayed with olive oil spray. Bake at 400 degrees for 15 minutes.

Remove from oven, toss quinoa with the lettuce. Serve.
