Quinoa Veggie Chili

Ingredients
1 c. uncooked quinoa 2 green bell peppers1 medium size yellow onion2 stalk celery2 cans petite diced tomatoes1 can black beans, drained1 can chili beans, undrained2 Tbsp. chili powder (or to your liking)1 Tbsp. cumin powder (or to your liking)1 tsp. salt1 tsp. black pepper
Directions
Follow the cooking instructions on the package for the quinoa. Meanwhile, dice your veggies and saute' them in a big chili pot until they are tender. Add your spices, tomatoes, beans, and cooked quinoa and let simmer for about 10 mins so the flavors will meld together. Enjoy!

    I made this for the first time tonight. A couple of additions that I made were using Rotel diced tomatoes with jalapeno peppers and I added 2 diced raw jalapeno peppers, seeded & deveined. The final result is very good. The servings are quite large, given it makes 6 servings. - 4/5/14
