Fava Bean Salad "Fool Mudammas"

Ingredients
1 lb. fava beans3/4 clove garlic3 tbsp. olive oil1/4 cup lemon juice3/4 tsp. salt1 tsp. chopped parsley
Directions
Boil fava beans for 1-2 hours over medium heat. Drain half the water. Add salt, lemon juice, and crushed garlic. Mix well, or slightly mash if desired. Pour in a bowl and garnish with chopped parsley and olive oil. If desired, decorate with slices of pickles and hot peppers, green onions, and chopped parsley. Serve for breakfast with pita bread. This could also be used as an appetizer or a meatless side dish.
