Mom's Breakfast Bake

3 cups egg substitute (eggbeaters)2 cups nonfat milk1 cup shredded lowfat cheddar (or low fat cheddar/mozzarella mix)2 cups shredded potatos (frozen)10 tbsp hormel bacon pieces (NOT bits!)1.5 cups fat free croutons
preheat oven to 350 degrees.
thoroughly spray 13x9 pan with nonstick spray.
whisk together eggs and milk in separate bowl. add in cheese, potatos, and bacon. pour into 13x9 pan. sprinkle croutons evenly on top.
bake for 45 mins.
i prefer to prepare this the night before and refrigerate until ready to bake in the morning.
