Sweet and Mild Curry Chickpeas

Ingredients
3.5 cups of drained chickpeas0.5 cup of frozen green peas1 medium onion, chopped0.5 tablespoon olive oil1 cup water3 cubes of House (r) Vermont Curry paste
Directions
Chop onions finely. Heat skillet and add olive oil, rotating pan to coat bottom evenly. Add onions and gently sweat (don't let the onions begin to brown!) until translucent. Add 1/3 cup of water and simmer a few moments, then add green peas. Bring back to a simmer, and add cubes of curry sauce. Gently stir as the sauce begins to incorporate with vegetables. Add water as needed. Sauce should be runny and thin and fully incorporated before you add the chickpeas. Heat through. Makes about 6 1-cup servings.
