Delicious Oatmeal Raisin Walnut Cookies (gluten and sugar free!!!)

Ingredients
4 Tbsp. Unsalted Butter¼ cup xylitol sweetener 1 tsp molasses1 tsp vanilla1 egg½ cup total mixed flours (rice- brown & white, potato starch)¼ tsp salt¼ tsp baking soda¼ tsp xantham gum¼ tsp cinnamonDash of nutmeg¾ cups oats½ cup raisins½ cup walnuts
Directions

1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
2. Cream together the butter and the xylitol.
3. Add in molasses, vanilla, and egg and beat until combined.
4. Sift together the dry ingredients and add by hand to the wet ingredients, and then stir in the oats, raisins, and walnuts.
5. Drop heaping teaspoonfuls onto the cookie sheet. Bake for 16-20 minutes. Cool on a wire rack and enjoy.

Yield: 15 cookies
