2 pounds frozen Spinach (chopped & drained)1 Lrg. Vidalia Onion -cut into slices15oz Tomato w/ Chilies (Ro Tel, canned)8 Lrg. Eggs2 cups Soymilk (Unsweetened)4 cloves garlic1 teaspoon mustard1/4 teaspoon ginger [powder]salt & pepper to taste
Preheat Oven to 350
In mixing bowl: eggs, milk, & spices whisk to fully mix. Pour liquid over Spinach. Bake uncovered 45 to 65 minutes, or until browned, puffy & the center tests done. Let cool for 5-10 minutes before cutting into squares.
