Italian Stuffed Chicken

Ingredients
* Chicken Breast, no skin, 3 breast, bone and skin removed * Mozzarella Cheese, part skim milk, 6 oz * Spinach, frozen, 0.5 cup * Peppers, sweet, red, raw, sliced, 0.5 cup * Yellow Peppers (bell peppers), 5 strips * Jalapeno Peppers, 0.1 cup, sliced * Mushrooms, fresh, 1 medium * Garlic, 6 tsp * Salt, 1 dash * Pepper, black, 1 tsp * Canned Tomatoes, 0.5 cup
Directions
Pound out 3 6 oz. chicken breasts. Lay each breast out flat and add 1/4 cup of mozzarella cheese and remainder of ingredients (thawed and chopped). Fold chicken over, inserting toothpicks to hold together if necessary. Cook at 375 degrees for 45 minutes or until chicken is cooked through.
