Rigatoni with Ground Turkey and Vegetables

Ingredients
1 pound rigatoni pasta1 tablespoon vegetable oil1 pound ground turkey1 Green bell pepper, chopped1 red bell pepper, chopped2 cups broccoli florets1 tablespoon minced garlic1/2 teaspoon fennel seeds, crushed2 cans (14 1/2 oz each) stewed tomatoes1 cup shredded part skim mozzarella cheese
Directions
1. Bring a large pot of lightly salted water to a boil. Add pasta and cook as package directs until firm-tender.

2. While pasta water come to a boil and pasta cooks: Heat oil in large nonstick skillet over medium-high heat. Add sausage; saute 8-9 minutes until done. Remove with a slotted spoon; set aside.

3. Add peppers, broccoli, garlic and fennel seeds to skillet. Cook, stirring often, 7-8 minutes until vegetables are crisp-tender. Stir in tomatoes and sausage, increase heat to high and cook uncovered, stirring often, 2 minutes or until hot.

4. Drain pasta; return to pot. Add sausage mixture; toss to mix. Spoon into a serving dish; top with mozzarella cheese.

    I didn't put sausage in it, added more vegetables and used whole wheat pasta as well. My fiance' and I both liked it and it makes great leftovers. - 6/19/09

    I made this for my family and they really liked it. I did not add the brocolli however and insted sauted an onion as well as replaced one of the stewed tomatoes with diced tomatoes. Will put on my make again list. - 11/20/08
