Grilled Eggplant Marinara

Ingredients
Eggplant, 2 slices, peeledOlive Oil, 1 tbsp Mozzarella Cheese, part skim milk, 1 oz Spaghetti/Marinara Sauce (tomato sauce), 2 tbspSalt, 1 dash Pepper, black, 1 dash
Directions
1. Brush eggplant slices with olive oil and sprickle with salt and pepper
2. Grill, broil or pan fry eggplant for about 3-5 mins per side
3. Top eggplant with marinara sauce and cheese
4. Microwave for 1 min
