Pumpkin Pancakes

3 cups of pancake mix6 T. melted margarine or butter3 eggs (separated)2 c. fat-free buttermilk1 c. canned pumpkin1/2 T. pumpkin pie spice
Mix melted margarine, egg yolks and pumpkin. In a separate bowl, mix buttermilk and egg whites. Combine wet ingredients. Add pancake mix. Mix until just moistened. Pour by ladle onto griddle. Cook until edges and bubbles are set. Flip to cook other side.
Makes 6 servings (3 pancakes each)
