Super Easy Pumpkin Muffins

Ingredients
1 15 oz. can Libby's Pure Pumpkin Puree 1 18 oz. box Betty Crocker Super Moist Carrot Cake
Directions
Combine pumpkin and cake mix. Spoon into 12 cupcake liners and bake at 350 degrees for 20 -25 minutes. NOTE: The batter is very sticky and leaves a rough textured top on the muffins, but they're light and delicious. Makes 12 muffins.

    I love making this with the spice cake. I also sometimes make a frosting for it. Mix a packet of sugar free/fat free cheesecake flavored pudding with 1 cup skim milk until it starts to thicken slightly then add a small tub of cool whip free, stir to combine. So yummy! - 3/11/10

    Duncan Hines has a "Decadent Carrot Cake" mix with dehydrated carrots and raisins. I used that along with adding a few walnuts...it was Fantastic! - 4/18/09
