Heat oven to 350 degrees F. Spray two 12-cup muffin pans with cooking spray.
In large bowl, combine thawed chopped broccoli, cheese, egg substitute, bell pepper, onion, garlic, and pepper sauce. Mix well. Divide mixture evenly among muffin cups, approx. 1/4 cup mixture each.
Bake at 350 degree F. for 20 to 25 minutes or until tester inserted comes out clean.
2 cups is one serving, leftovers can be frozen one serving (2 cups) in snack size baggies and be reheated in microwave.

1 package (10 Oz.) frozen chopped broccoli, thawed1-1/2 cup shredded cheese ( reduced-fat cheddar, or Jack cheese)1-1/2 cup egg substitute1/2 cup finely diced red bell pepper1/2 cup finely diced red onion1 tsp hot pepper sauce (optional and to taste)
