Ingredients
* *Summer Squash, 1.5 medium * Eggplant, 350 grams * Onions, raw, 1 small *Potato, raw, 3 medium * Oregano * Tomato Paste or chopped tomatos * Water, tap, 3 cup * Pepper, black, * Salt, * Olive Oil, 1 tbsp
Directions
Cut in medium cubes the vegetables. Let the eggplants to stay for 15 minutes in water with some salt to let a little of the bitter taste go away. In the mean time sautee the oil with the onion and the garlic in a cooking pot. Add the the rest of the ingredients. Add the tomato pure (or tomato) and the water. Cook in medium heatThe food is ready when the potatoes are fully cooked. If you like more liquid in the food you just add some more water otherwise you can let it be in the more dry side.

* You can experiment with the quantities or the types of the vegetables. Serve with feta cheese
