1 Whole chicken or 3 chicken breasts (no skin)5 cups of Water (or chicken broth)2.5 lb. bag of frozen mixed vegetables1 bell pepper (any color)1 onionOregano, salt, thyme, cumin, and bay leaf.
This recipe can either use store bought chicken broth or your own prepared chicken broth. If you use store bought broth, omit the spices. Otherwise, boil the chicken with 6 cups of water (will reduce to the needed 5 cups), all spices, and celery. After chicken is done, strain the liquid and put 5 cups into a rice maker (arocera). Shred the chicken and place the chicken in the ricemaker along with chopped onion, bell pepper, and bad of frozen mixed vegetable. Close ricemaker and set to cook.
