Lowfat Pumpkin Mousse

Ingredients
# Milk, nonfat, 1.5 cup # instant sugar-free butterscotch pudding mix, 1 oz # Pumpkin, canned, without salt, .5 cup ground cinnamon, 0.5 tsp ground ginger, 0.25 tsp Whipped topping, frozen, low fat (like Cool Whip), 1 cup
Directions
Whisk the milk and pudding mix for 2 minutes. Let stand until soft-set (this will take around 2 minutes). Combine the pumpkin, cinnamon, ginger and allspice and fold into the pudding mixture. Fold in 1/2 cup of the whipped topping. Spoon mousse into individual serving dishes. Refrigerate until serving, Top with remaining whipped topping. Yield: 4 servings.
