Warm Curried Salad

Ingredients
1 1/2 tbsp Patak's Tandoori Paste 1 tsp garlic powder1/2 tsp onion powder2 tbsp water150 g eggplant, unpeeled and chopped55 g sliced mushrooms55 g sliced zucchini
Directions
Pre-heat oven to 375ºF.
Combine paste, garlic and onion powders, and water, set aside.
Combine vegetables in a small roasting pan, cook 20-30 minutes.
Toss with thinned paste mixture.
Serve over a bed of lettuce (or pasta for a heartier meal).
