Chicken Soup with some Heat

Ingredients
1 tsp. canola oil5 boneless, skinless chicken thighs OR 2 boneless, skinless breasts1 medium onion, chopped3 stalks of celery, sliced1 cup carrots, chopped4 cloves of garlic, minced6 cups low sodium, fat free chicken broth2 cups water1 cup orzo pasta1 Tbsp. cumin2 tsp. salt1 tsp. black pepper1/2- 1 tsp. red pepper flakes
Directions
In a big pot, cook chicken in oil until done. Remove from pot to cool slightly. Meanwhile, cook veggies in the drippings until tender. Add broth and water. Dice up the cooked chicken and return to pot. Add spices and orzo pasta. Bring to boil. Continue boiling until pasta is done, about 7 minutes. Let cool slightly & serve. Makes 6 2-cup servings.
