Homemade Cinnamon Applesauce

For a 2 1/2 quart slow cooker:7 medium apples1/4 cup of sugar (more/less to desired sweetness)cinnamon, to taste
Core and peel apples. Chop into bite-sized chunks. (Bigger chunks if you like your applesauce on the chunky side!)
Put apples in slow cooker. Add sugar and cinnamon, and stir to combine.
Cook on high for about 4 hours, or low for about 6 hours. Stir occasionally. Apples will eventually start to get soft and break down. Cook as long as you wish to reach desired consistency. Add water only if apples begin to dry out (the mixture starts out dry but should get more liquid-y as time goes on). Applesauce will thicken slightly once refrigerated. Makes about 5 cups.
