Mock Waldorf Salad

Ingredients
1 can chick peas1/4 C walnuts (lightly toasted)1 med rib (1/3 cup) celery1 TBSP onion1/2 apple1 1/2 TBSP mayo1 tsp dijon mustard1 squeeze of lemon juice 1/2 TBSP honeylettuce
Directions
Chop or process the celery, onion, & apple until chopped small. Mix all the dressing ingredients in a medium mixing bowl, then add in the peas and nuts. Serve over leaf lettuce.
P.S. You can lower the fat even more by omitting the nuts & using low fat mayo... it is still really Good!!!
