Spinach-Feta Bake

Non Stick Cooking Spray3/4 cup chopped onion3 cloves of garlic, minced1 Tsp. Olive Oil2 10-ounce packages frozen chopped spinach, thawed and well drained1 cup low-fat cottage cheese, drained1 cup crumbled feta cheese1/2 cup refrigerated or frozen egg product, thawed1 Tsp. dried oregano or 1 Tbsp. snipped fresh oregano1/4 Tsp. freshly ground black pepper1/4 cup grated Parmesan2 Tbsp. fine dry bread crumbs
1. Lightly coat a 9-inch pie plate with non-stick cooking spray; set aside. In a medium saucepan cook onion and garlic in olive oil until onion is tender, about 4 minutes.
2. Stir spinach, cottage cheese, feta cheese, egg product, oregano and freshly ground black pepper. Add onions to spinach mixture. Spoon mixture into prepares pie plate.
3. In a small bowl, combine Parmesan and bread crumbs; sprinkle over spinach mixture. Bake, uncovered in a 350F oven for 30 to 35 minutes or until a knife inserted near center comes out clean. To serve, cut in wedges.

This was great and almost like making Greek Spanokopetakia's (Spinach Cheese Triangles) without the philo. I cut Whole Wheat Tortillas into triangles, warmed them and used this as a spread/dip. Next time I will try Pita Chips. This recipe should be listed in appetizers. Delicious! - 3/10/07
