Burbon Chicken

1.5 lbs boneless chicken breasts , cut into bite-size pieces 1-2 tablespoon olive oil (I used one tbsp.) 1 garlic clove , crushed 1/4 teaspoon ginger 3/4 teaspoon crushed red pepper flakes 1/4 cup unsweetened apple sauce1/3 cup light brown sugar (I used plain Splenda) 2 tablespoons ketchup 1 tablespoon cider vinegar 1/2 cup water 1/3 cup soy sauce 1 red bell pepper, diced1 onion, diced
Serves 4
Heat oil in a large skillet.
Add chicken pieces w/ pepper & onion and cook until lightly browned. Remove chicken.
Add remaining ingredients, heating over medium Heat until well mixed and dissolved. Add chicken and bring to a hard boil. Reduce heat and simmer for 20 minutes. Serve over hot brown rice or Bulgar and ENJOY. Great with steamed brocolli.

I love this recipe and have made it a few times without looking too closely at the nutritional values posted. I realized that the protein was waaay too low for 6 oz. of chicken per serving. Of course when I corrected the amount of chicken in the recipe the calories went up too but I still love it - 11/8/13

The perfect sweet and spicy combo! I thought the heat was just right, my fiance thought it was a bit too spicy, so maybe 1/2 tsp of the crushed red pepper would calm it down some. I added a couple of teaspoons of cornstarch to thicken it, and didn't simmer the full 20 minutes. Delicious! - 3/31/11
