Tess' WW Shrimp "Gumbo"

Ingredients

1Tbs olive oil1 Tbs flour1 celery stalk chopped1 med onion chopped1 med green pepper chopped1 clove garlic minced1 15 oz can diced tomatoes2 Tbs tomato paste1 1/2 c fat free chicken broth1-2 bay leaves1/8 tsp paprika1/4 tsp dried basil104 tsp salt and 1/4 tsp pepper - or - 1/2 tsp creole seasoning1 lb raw shrimp cleaned and shelled2 Tbs scallions chopped1 Tbs fresh lemon juice
In large skillet over med hi heat, simmer fresh veg in oil till tender.
Add flour mix and cook 1 min
Add tomatoes, tomato paste, broth and seasonings; bring to boil
Reduce heat, add shrimp and simmer on low heat 5 mins
Add scallions and lemon juice; cook one more minute
Makes 4 servings
Serve over 1/2 c brown rice (add appropriate calories to count)
