Optional: ingrediants:14 toasted walnut halvess, broken into small pieces. 1/3 cup raisins, grated fresh gingerStandard ingrediants:1 cup whole wheat flour1 cup white flour, preferably cake flour1 tsp baking soda1/2 tsp baking powder1 tsp cinnamon1/4 tsp nutmeg16 tsp Splenda brown sugar blend3 eggs1/2 cup oil1 tsp vanilla2 cups shredded and chopped carrots.12 muffin pan liners
Mix all dry ingrediants including splenda and spices, reserving walnuts. Add carrots, optional fresh ginger, optional raisins, then add oil and eggs.
Divide batter into 12 regular muffin tins. Sprinke walnuts on top if using.
Bake at 350 until middle of a muffin springs back. Approx 20 minutes.
