Low Fat Yogurt-Banana Omega-3 Muffins

2-3 small mashed, ripe bananas1/2 cup applesauce1/2 cup plain yogurt3 egg whites1 tsp vanilla1/4-1/2 cup sucanat, raw sugar, honey, or your favorite sweetener1 cup 100% whole wheat flour1 cup oat flour (or white)1/4 cup ground flax meal1/4 cup wheat germ2 Tablespoons flax seed1/2 tsp baking soda1/2 tsp baking powder1/4 tsp salt
Preheat oven to 375 degrees. Coat standard muffin pan with butter flavored cooking spray and set aside.
In large bowl, combine bananas, applesauce, yogurt, egg whites, raw sugar or sweetener, and vanilla extract until well blended.
Add flours, wheat germ, flax meal, flax seed, baking soda, baking powder and salt. Stir until combined.
Divide batter into the 12 greased muffin cups.
Bake in preheated 375 degree oven 16-21 minutes, until done.
The flax meal causes the muffins to brown faster so watch closely.
Makes 12 muffins.
