Salmon with Dill/Dill Sauce

Ingredients
3 ozs of salmon fillet per person (or 1 pound fillet for 4-5 people)1 med-lg shallot, chopped finely5-6 stalks of fresh dill1 tsp dried tarragon1/3 cup dry vermouthLarge sheet of Aluminum foilOptional:Dill Sauce1/4 Cup of light mayo1/4 Cup of light sour creamjuice from 1/2 lemon3 TBSP fresh dill, chopped finelysalt/pepper to tasteCombine all ingredients and refrigerate for at least 30 mins before serving.
Directions
In small sauce pan, combine vermouth, tarragon, 1/2 chopped shallot and a pinch of salt. Simmer until reduced by half.

Meanwhile, rinse and pat dry salmon fillet. One big peice is best... and leftovers are good cold or warm.

Line a baking pan with aluminum foil. Place fish on foil and arrange fresh dill and remaining shallot on top. Pour reduced vermouth mixture over and seal tightly. Bake at 350 for 35-40 minutes.

Serve with Dill Sauce (optional). Included 4 TBSP sauce in recipe calculator.
