2 cups cooked brown rice1 cup frozen green peas2 cups fresh spinach2 ounces pumpkin seeds3 to 4 cloves chopped garlic1/4 cup chopped red onion2 tblsp extra virgin olive oil2 tblsp lite soy sauceDash ofblack pepperYour favorite hot sauce (optional)
To a large sauce pan, add olive oil, chopped garlic, red oinion and pmpkin seeds. Toss lightly til tender. Add cooked rice and peas stirring continually. Add remaining ingredients. Turn off stove to prevent spinach from over cooking. Continue stirring until all ingredients are well blended.Serve with a nice salad and fruit plate on your best china.
