Bacon, Egg & Cheese Breakfast Casserole

3 c. cubed whole wheat breadVegetable cooking spray3/4 c. diced lean cooked canadian bacon2 tbsp. diced sweet pepper4 oz. shredded, Cheddar cheese1 1/3 c. skim milk3/4 eggs or egg substitute1/4 tsp. dry mustard1/4 tsp. onion powderDash pepper and paprika
Place bread in an 8 inch square baking dish coated with cooking spray. Layer bacon, red pepper, and cheese over bread; set aside. Combine remaining ingredients; pour over cheese. Cover and refrigerate 8 hours or over night. Bake uncovered at 350 degrees for 30 to 40 minutes.
