Sweet Potato and Pineapple

Ingredients
2 lbs sweet potatoes, cooked, peeled and mashed (about 6 potatoes or 5.5 cups cubes)1 cup undrained crushed pineapple1 1/2 Tbsp orange juice3/4 tsp grated orange rind1/2 tsp cinnamon1/4 cup packed brown sugar
Directions
Spray cooking oil to grease a 1 1/2 quart casserole dish.
Peel, cook , drain and mash sweet potatoes. Add remaining ingredients and mix well.
Bake covered, at 350 for 30 minutes.

Makes 6 servings

I took this to a Thanksgiving dinner years ago and my cousin, an experienced cook, added it to her "must haves" for the day and I make it regularly.
