Ingredients
* Milk, 1%, 1.5cup * Salt, 0.50 tsp * Vanilla Extract, 2 tsp * Olive Oil, 1 tbsp * Lemon Peel, 1 tsp * Baking Soda, 1/4 tsp * Egg, fresh, 4 large (remove) * Baking Powder, 3.5 tsp * Margarine-like spread, Country Crock, regular, 6 tbsp * Granulated Sugar, 2 cup * Cocoa, dry powder, unsweetened, 1 tbsp * Flour, white, 3.75 cup * Tequila, 3 fl. oz Note:You can substitute Milk with Coffee-Mate Fat Free and water or use (Skim milk), for less fat.
Directions
1. Preheat oven to 350.
2. Spray cake pan with nonstick spray.
3. In a mixing bowl, whisk together the flour, baking powder, Baking Soda, salt and sugar.
4. In a separate bowl, whisk together Sugar eggs ,Margarine and olive oil.
5. Pour wet ingredients into dry a little bit of the time and mix until just combined .
At the very end mix vanilla.
6. Divide the batter evenly to create three batters, second batter mix with cocoa pour in the middle to create the swirl, the rest of the batter goes on top.

7. Bake about 55 minutes, or until top is springy and a knife inserted in the center comes out clean.
8. Cool in the pans on a wire rack for 5-10 minutes.
9. Turn cake onto a rack and cool completely.



Note: If you want you can change to Non Fat Milk or use Coffee-Mate (4 Tbsp) and Water
