Slow Cooker Healthy Potato Soup

Ingredients
6 large potatoes, cubed3 large carrots, sliced3 stalks celery, chopped2 onions, chopped4 chicken bouillon cubes6 cups of water1 can nonfat evaporated milkshredded cheddar cheese (optional, not in calculation)
Directions
Combine all vegetables, bouillon, and water. in large crock pot. Cook on low for 8 - 10 hours, or high 3 -4. Add evaporated milk, stir till heated through, and serve. May serve with shredded cheddar cheese.

    UPDATE last night I made a few additional changes. I used 4 cups of low sodium chicken stock, 1 onion instead of two, removed the soup mixture from the crock pot and blended it. Saute 1 onion and turkey bacon together and added as topping along with cheddar cheese. AWESOME!!! - 11/6/08

    I've made my own Potato soup for years, but I'll try this as a healthy alternative. If its too runny, try adding some instant mashed potato flakes at the end. You can also add a head of broccoli and turn this into "cream of broccoli" soup. :) - 10/20/09

    Delicious and easy! I added mushrooms and used only 1 onion. Added thyme and bay leaves for flavor--would suggest seasoning to taste. Also used 4c low-sodium chicken broth and 4c water. A quick whirl with the immersion blender thickened it up nicely. Will make again! - 12/31/09

    This was very good. My husband even liked it. I used fat free chicken broth with 50% less sodium and added about 1/2 cup of instant potato flakes to give it a little thickening. It really turned out well. I would recommend this to everyone - 11/29/09

    After freezing this soup, the texture was good but it was tasteless. I added minced garlic and fat free cream cheese. It tasted like a bisque! Fabulous base recipe! - 1/20/09

    Made this as written the first few times. I now use only 4-4 1/2 cups water, 4 Knorr Vegetable Boullion cubes - they are larger than regular cubes and give a rich flavor. Usually add extra carrots & celery, sometimes veggies from the garden - green & wax beans, etc. Great soup. Family fave! - 9/22/11

    It's so easy to make. I threw everything together the night before and stuck it in the fridge so all I had to do in the morning was put it on the heat. It's a little bland at first but easy to season to taste. And SO filling. - 3/30/10

    It's pretty bland, but I dumped in some garlic, seasoned salt, parsley, cayenne, and black pepper and then it was really tasty. I used an immersion blender to blend some of it into a nice thick, but chunky soup. It was a big hit! - 3/17/10

    Great! Creamy potato soup is a weakness of mine so this is a fantastic find! I definitely recommend adding spices and a little less water, or finding another way to thicken it up - 1/27/10

    To thicken I used my stick immersion hand blender to make blend up some of the potatos, carrots and celery into a paste like mixture that made the soup creamy. - 10/16/09

    It smelled SO good cooking in the crockpot...but we weren't impressed, even after blending it to make it thick and using cheese, turkey bacon, and other seasonings. Surprisingly, the leftovers were good the next day. Don't think we'll make this again. - 3/25/10

    I MADE THIS AS WRITTEN, BUT USED A DUTCH OVEN ON THE STOVE. I DID NOT ADD ANY SALT AT FIRST AND IT WAS BLAND. I USED 2 CANS OF LOW SODIUM CHICKEN STOCK. THE SECOND DAY I ADDED ABOUT FOUR SLICED OF COOKED REGULAR BACON, PEPPER, CELERY POWDER AND A LITTLE SAGE AND THE TASTE WAS MORE TO MY LIKING. - 3/8/10
