1 lb. lump crabmeat, picked through for shells2 large eggs2 Tbsp mayo2 Tbsp horseradish mustard (if you cannot find horseradish mustard you can make your own with brown mustard and horseradish)1 Tbsp fresh parsley, chopped1/8 tsp salt1/8 tsp black pepper1/2 sleeve (approx 12) multigrain saltines, crushed2 Tbsp olive oil
Combine crabmeat, eggs, mayo, horseradish mustard, parsley, salt and pepper in medium bowl. Mix gently. Divide mixture into 6 balls (DO NOT pack mixture). Heat oil in skillet. Roll mixture balls in cracker crumbs and add to hot oil. Brown on each side (approx 3-4 minutes per side) and serve immediately.
