Pumpkin Stew

1 lb pumpkin chunks1 onion, chopped1 1/2 cup s thinly sliced carrots16 oz canned tomatos1 1/4 cups chicken stock1/2 teaspoon maceblack pepper to taste
Cook pumpkin by placing flesh side down into microwave dish. Cover and microwave on high for 15 minutes.. Saute onions and carrots in small amount of olive oil, add tomatos, chicken stock and spices. Cook for 15 minutes over medium heat. In the meantime, cube the cooked pumpkin into 1 inch cubes. Add to stew and cook an additional 15 minutes over medium heat. Serve with rice and a dallop of sour cream if desired.
