- 1/4 cup olive oil- 2 large red onions, finely chopped- 4 medium carrots, grated- 1 tsp Herbes de Provence (a spice mix)- 3 cups vegetable broth- 1 cup dry du Puy or green lentils, rinsed- 1 28oz can diced tomatoes, with juice- 1/4 cup fresh parsley, chopped- 1/4 cup red wine- Salt and pepper, to taste- Swiss or sharp cheddar cheese, grated (to serve)
1. In a large pot or Dutch oven, cook the onions and carrots in the olive oil, over medium heat, 3 to 5 minutes.
2. Add the spices, stock, lentils and tomatoes and bring to a simmer.
3. Lower heat, cover and simmer 45 minutes, until lentils are tender.
4. Add red wine and parsley.
5. To serve, ladle into bowls and top with a bit of grated cheese.
6. Enjoy!
