Rachel's low fat artichoke spinach dip

2 frozen (10 oz) boxes of spinach, drained2 (14 oz) canned artichoke hearts, drained1 1/2 (8 oz box) fat free cream cheese1 cup fat free half and half1/2 cup parmesan cheese1 1/2 cup mozzarella cheese4 cloves minced garlic4 tbs minced onion1/4 tsp cayenne pepperground pepper to taste
thaw and drain 2 (10oz) boxes of spinach
cut up 2 (14 oz) cans of artichoke hearts and drain
Throw into crock pot with 1 1/2 packages fat free cream cheese, 1 cup fat free half and half (add more for thinner dip), parmesean cheese, and mozzarella cheese (reserving 1/2 cup), minced garlic, finely chopped onions, cayenne pepper, and black pepper to taste. Stir well.
Put on high for 1 hr stirring occasionally (every 20 min) Turn oven on to 400 during last 20 min to preheat
Put dip into a serving dish and sprinkle remaining 1/2 cup of cheese on top and bake in oven until cheese is melted. (You can also just add all the cheese directly to the crock pot and serve out of the pot).
serve with sliced baguettes, carrot or celery stalks, or tortilla chips. (nutrition info is for dip alone)
Makes appetizer for 16 people.
