Ingredients
1 can corn, 1 can black beans, 1 jar salsa, chicken breast
Directions
cook in a crock pot, can add sour cream, cheddar cheese or jalpenos. Serve over Brown Rice. I have also substituted redbeans, used more chicken and less salsa, it always turns out great. My mother-in-law has turned left overs into soup.

    I put in extra chicken breasts (5), fresh salsa and sour cream in the crock pot as well as the beans and corn. It was great! And I ate it all week. I can see how easy it would be to make in to soup. - 1/16/10
