Sambar Lentils

1/2 a stalk of celery, sliced1/4 of a large onion, chopped1 plum tomato, diced5 or 6 baby carrots, sliced1 TB olive oil1 cup of lentilsWater1 tsp turmeric3-4 tsp. sambar seasoning
Heat the olive oil and add the veggies. Sautee until the onion is soft. Add the turmeric and sautee for about one minute. Add the lentils and cover with plenty of water.
Simmer until the lentils are thoroughly cooked about 20 minutes or so. Add the sambar seasoning and salt to your taste.
