Irish Soda Bread

3 1/2 cups flour1 tsp baking soda1 tsp salt1 1/2 cups milk (I used rice milk)
Preheat oven to 450. Spray cookie sheet with cooking spray. Combine the dry ingredients in a large bowl, stirring well. Make a well in the center of the dry mixture and add the milk, stir the flour and milk mixture just until well combined. The dough will be soft, but shouldn't be too wet and sticky. If dough is too dry to mix, add just a tiny bit more milk. As soon as you can gather the dough into a ball, place it on a floured surface. Knead very lightly for just a few seconds, just enough to gather the dough together and flip it over. Patting it into an eight inch round flat shape. Place in the center of a greased baking sheet and make a long cut across the opt of the dough about 1/2 inch deep. Bake for 15 minutes at 450 degrees, then turn the oven down to 200 degrees for 30 more minutes. When the bread is done, it should sound hollow when tapped on the bottom.
