Ground Turkey Soup

Ingredients
2 cups of wild rice, cooked1 lb of 97% fat free ground turkey meat1 large purple onion, chopped3 garlic cloves, minced1 large zucchini, chopped1 cup of mushrooms, sliced or pieces1 large yellow squash, chopped1 -1 ½ cups of carrots chopped1 bay leaf (opt)1 can of Healthy Request Condensed Cream of Celery by Campbell’s Soup1 can of tomatoes past8 cups of waterpepper to taste1 large tomato chopped
Directions
Have the Rice already cooked.

In a large cooking pot on medium high heat, brown the turkey meat with onions, and garlic.

Once turkey meat is brown, add zucchini, squash, mushrooms, carrots, bay leaf and water. Bring to a boil.

Add rice.

Bring down heat to a simmer.

Then add the can of soup and tomatoes past and pepper to taste. Add chopped tomato.

Let simmer for 10-20 min. ( the longer it simmers the better the bay leaf seasons the soup)

Makes about 18 cups (serving size is a cup and a half) or 12 servings
