Shrimp Stuffed Portobello Mushrooms

4 Portobello Mushrooms1 clove garlic, chopped1 small onion, diced1/4 cup bell pepper, diced2 Tablespoons Butter1 Tablespoon EVOO1/2 Tsp salt1/2 Tsp garlic powder1/2 pound peeled, devined & chopped 1/2 cup Shredded Parmesan cheese1 cup Shredded Cheddar Cheese1/2 cup bread crumbs3 Tablespoons Cream Cheese
Remove stem from mushrooms, chop and set aside. Scrape gills out of mushrooms.
Melt butter & EVOO in pan, add onion, bell pepper and mushroom stems, simmer a few minutes, then add shrimp, simer til shrimp is done, don’t over cook. Remove from heat and pour in bowl, with all juices.
Add Cream Cheese, stir, add everything else but ½ cheddar cheese.
Stuff mushrooms, sprinkle with cheddar cheese, bake at 325 for 45 minutes.
