Rosemary Orange Roughy

4 fillets orange roughy (1/4 lb each)3 tablespoons Olive oil, halved1 cup White table wine, halvedrosemary1/4 cup plain soymilk1 lb potatoes, sliced
preheat oven to 350*
divide 1 pound fish into 4 fillets, rub with 1 tablepoon Ooil and rosemary, lay in baking pan, mix 1/2 cup white wine with 1/2 tablespoon Ooil and pour over fillets in baking pan with more rosemary. (a snug fit is best)
mix 1/2 cup wine, 1 tablespoon Ooil, and 1/4 cup soymilk
spread rosemary and 1/2 tablespoon Ooil in the bottom of a baking pan, slice potatoes thinly and layer potatoes, with each layer add rosemary and pour over a bit of the soy mix.
set side by side in the oven
steam baby carrots and aparagus for a colorful plate.
