2 c. whole wheat flour2 c. white flour2 c. granulated sugar2 tsp. ground cinnamon2 tsp. baking soda1 tsp. salt16 oz canned pumpkin1 c. vegetable oil2 eggs2 TBS. milk2 tsp. vanilla extract1 c. semisweet choc. chips
In a mixing bowl, combine flours, sugar, cinnamon, baking soda and salt. Add pumpkin, oil, eggs, milk, and vanilla; beat on medium speed until mixed well. Stir in choc. chips. May need to add in 2 TBS. or more of water to thin out batter. Spray muffin pan with non stick spray and drop by large TBS. into each hole. Bake at 375 degrees for 13-15 minutes or until edges begin to brown. Cool for 2 minutes; remove to a wire rack to cool completely.
