Three Bean & Pepper Chili

2 Tbsp Vegetable Oil1 large onion, chopped1 yellow pepper, chopped1 green or orange pepper, chopped1 red pepper, chopped2 Tbsp chili powder1 tsp ground cumin28 oz can crushed tomatoes10 oz box frozen corn1 can black beans1 can kidney beans1 can pinto beans2 tsp white vinegar
Combine all ingrediants into a crock pot.
Stir well.
Cook on high for 4 hours, or on low for 8 hours
8 large servings (yield about 1.5 cup pers serving)
Serve plain, or it is also great topped with shredded cheese. I like to eat mine with some tortilla chips too!

I made this recipe tonight for dinner and it was great! I made a few modifications: We like SPICY so I added a can of green chilis, red pepper flakes, and a half tsp of montreal steak seasoning. I did not use the oil in the beginning- rather just sauteed garlic with the peppers & onion- AWESOME!! - 6/10/09
